What you need

  • 4 (500g) zucchini, grated
  • 1 cup frozen peas, thawed
  • 4 spring onions, thinly sliced
  • 1/4 cup finely chopped mint
  • 3/4 cup SR flour
  •  salt and freshly ground black pepper, to taste
  • 3 eggs, lightly beaten
  • 1/4 cup oil
  • 250 g PHILADELPHIA Spreadable Cream Cheese
  • 200 g smoked salmon
  •  6-8 eggs, poached
  •  chives, snipped, for garnish
  •  mint leaves, shredded, for garnish

How to make it

COMBINE the vegetables, mint, flour, seasonings and eggs in a bowl. HEAT a little oil in a frying pan and then fry ¼ cup amounts over a moderate heat, turning and cooking until golden. Drain briefly on paper towel, keep warm and repeat with remaining mixture to make 16.

SPREAD each with PHILLY then top with salmon and an egg and garnish with the herbs. Serve immediately.
